Why do you want to study this course or subject?
My interest in wine science began with a two-litre bottle of supermarket apple juice and a packet of dried yeast. I wanted to see fermentation happen rather than read about it, so I set up three jars in the airing cupboard at different temperatures and tracked how quickly the airlocks bubbled. The results were messier than my notes suggested they would be, and that gap between the textbook and the jar is what pulled me in. Wine sits at the meeting point of plant biology, microbiology, soil and climate, and human judgement, and I find the last part as interesting as the chemistry. A grape is a solution to problems set by weather, rootstock and a grower's decisions months earlier, and the finished drink still carries traces of all of it. Studying Geography alongside my sciences has made me think about why England is now producing sparkling wine in commercial quantities, and how growers plan for seasons that no longer follow reliable patterns. I want to understand the whole chain properly: how canopy management affects sugar and acid, how yeast strains shape aroma compounds, why a wine becomes unstable in the bottle. A degree that teaches both the vineyard and the laboratory is what I am after, because I do not think either side makes much sense on its own.
How have your qualifications and studies helped you to prepare?
My A levels give me the foundation this course needs. Chemistry has been the most directly useful: the organic module covering alcohols, carboxylic acids and esters explained why my fermentation jars smelled faintly of pear drops, and titration practicals taught me the care needed to get a repeatable result. I can now see why measuring titratable acidity accurately matters when a winemaker is deciding whether to adjust a must. Biology has covered respiration and anaerobic pathways, enzyme kinetics and the effect of pH and temperature on enzyme activity, all of which underpin what happens inside a fermenting tank. I chose an independent Biology investigation on the effect of sugar concentration on yeast activity, using gas volume as my measure, and learned how easily a poorly controlled variable ruins a data set. Geography has given me soil science, hydrology and climate, plus practical fieldwork skills including soil texture testing by hand and using sampling frames along a transect. I have also improved at writing up work clearly, using spreadsheets to plot results and being honest about uncertainty. Outside lessons I have read Jamie Goode's The Science of Wine, borrowed from the county library, which introduced me to topics such as reduction, oxidation and the debates around closures, and sent me looking for more on yeast metabolism.
What else have you done to prepare outside of education, and why are these experiences useful?
I have not had access to a working winery, so I built what experience I could. Over one summer I ran a series of small ferments in the kitchen, using pasteurised juice, a cheap hydrometer and a notebook, comparing two yeast types and recording specific gravity each morning before my shift. I kept temperature logs and tasted samples for sourness and cloudiness rather than for pleasure, and I learned quickly how much sanitation matters after one jar developed a vinegary smell. Writing up what went wrong taught me more than the successful jars did. In June I paid for a public open day at a vineyard about an hour away, where the grower walked us through trellising, spraying decisions and why the site faced the way it did. I asked about frost and came away with a much better sense of how narrow the margins are for English growers. My Saturday job on a supermarket checkout and shelf-stacking rota has taught me reliability, working under pressure at busy times, and how customers actually choose bottles, usually by price and label rather than region. I also help on a community allotment plot, pruning fruit bushes and keeping the watering rota going, which has given me patience with slow-growing plants and some feel for a growing season. I am comfortable getting muddy and comfortable in a laboratory, which seems the right combination.
