Why do you want to study this course or subject?

Cycling to college takes me past a field that was grazing land five years ago and is now eleven rows of trellised vines. Watching it change gave me a question I still find interesting: why here, and why now? Vines respond to slope, aspect, soil drainage and frost risk in ways I can partly predict from my Geography and Biology work, and the answer clearly is not only climate. It also involves who owns the land, what a tonne of fruit is worth, and whether anyone locally can press it. I want to study viticulture and oenology because it sits exactly on that join between plant science, chemistry and the practical decisions of a business that only gets one harvest a year. In Chemistry I enjoy the parts of the course where a measurable change has a sensory consequence, and fermentation seems to be that idea at scale: yeast metabolism, acid balance, oxygen exposure and sulphur additions all shaping something a person eventually judges by taste. I am drawn to work where a laboratory result has to be translated into an instruction a picking team can actually follow. Long term I would like to work in vineyard management or in a winery laboratory in England, where growers are still building a body of local knowledge rather than inheriting centuries of it. That feels like a good place to be useful. A degree that combines field seasons, analytical training and the commercial side of the drinks trade suits how I prefer to learn, which is to read something, then test whether it holds up outdoors in February.

How have your qualifications and studies helped you to prepare?

My A levels have each contributed something I expect to use. Biology has given me plant transport, photosynthesis and plant pathogens, which I now read about differently after looking up how downy and powdery mildew spread in a damp English summer. Chemistry underpins everything I have learned about must and wine analysis: titration, pH and buffers, redox, and the organic chemistry of alcohols, acids and esters. I have become more careful about method than I was in Year 12, particularly repeating measurements and recording anomalies instead of quietly ignoring them. Geography has been the subject that made the field visible to me. My independent investigation compared land use on two farms within four miles of each other, and I used soil sampling, infiltration tests and slope measurements alongside interviews with the farmers about why they had made recent changes. One had planted vines on a south-facing chalk slope; the other had stayed with arable and was blunt about the capital cost and the wait for a first crop. Handling that mixture of physical and human data taught me to be honest about small sample sizes. Alongside coursework I have read widely, including Jamie Goode's writing on the science behind winemaking, which helped me see how much debate exists about practices I had assumed were settled, such as the use of oak and of cultured versus ambient yeasts. I have also worked through introductory material on wine faults, and I attend a weekly college study group where we practise explaining chemistry topics to each other, which has improved how clearly I write up practicals.

What else have you done to prepare outside of education, and why are these experiences useful?

For the past eighteen months I have worked Saturdays and school holidays in a farm shop, which has taught me more than I expected. I stock and price the drinks shelf, which includes six bottles from vineyards within the county, and I have had to learn enough about them to answer questions honestly rather than guess. I take stock rotation and date checks seriously, follow the shop's rules on age verification, and have covered the deli counter during busy periods, where hygiene records and temperature logs are checked daily. Working to those standards has made laboratory discipline feel familiar. At home I have run a modest project over two growing seasons. I took hardwood cuttings from a neighbour's old vine, rooted them in sand and compost, and grew nine plants in pots to compare two watering regimes and two pruning approaches. I measured shoot length fortnightly and photographed leaf damage. My results were messy, partly because a late frost affected one group unevenly, but I learned about spur pruning, about how quickly mildew appears on crowded foliage, and about the value of labelling everything properly. I also help my grandmother on her allotment most Sundays, digging, composting and staking beans, which has given me a realistic sense of how physical outdoor work feels in bad weather. Playing netball for a village team has kept me organised about travel and commitments, and captaining the second team for a season meant chasing people for availability and encouraging newer players. I am comfortable working early starts, in a group, and with tasks that have to be finished before the light goes.
