Why do you want to study this course or subject?

I began keeping a sourdough starter two years ago because I wanted better bread than I could afford, and I ended up far more interested in what the starter was doing than in the loaves. Feeding it at different temperatures gave noticeably different results, and reading about the lactic acid bacteria and yeasts involved made me realise that the kitchen practices I had picked up by imitation had explanations behind them. Food technology attracts me because it sits exactly where that curiosity leads: understanding why a product behaves as it does, then designing it deliberately rather than by trial and error. I am drawn to the problems that come after the science, too. At the food pantry where I volunteer I see how much depends on shelf life, packaging size and how easy something is to cook in a household with one working hob. A product that is nutritionally sensible but needs three pans and an hour is not much use there. Reformulating for lower salt or sugar without producing something people quietly leave in the cupboard seems to me a genuinely difficult technical task, involving texture and preservation as much as taste. I want to study a course that covers food chemistry, microbiology and processing alongside product development and quality assurance, because the appeal for me is the whole route from ingredient behaviour to something that can actually be manufactured safely and consistently at scale.

How have your qualifications and studies helped you to prepare?

My A-levels give me a useful combination for this course. Chemistry has been the most demanding and the most valuable: work on reaction rates, equilibria and organic functional groups has changed how I read an ingredients list, and titration practicals taught me to be honest about precision rather than repeating a figure I wanted. Biology has covered enzymes, microbial growth and digestion, which connects directly to spoilage, fermentation and nutrition. In Food Science and Nutrition I have carried out sensory evaluation using ranking tests and worked through the principles of HACCP, including identifying critical control points in a chilled ready meal. Producing a hazard analysis for a dish I had cooked many times at home was a good corrective, because I found risks in cooling and storage that I had never thought about. I also learned about food labelling regulations and allergen management, which I now notice constantly at work. I chose an extended practical investigation comparing the rise achieved by a rye starter and a wholemeal starter at two proving temperatures, measuring dough height at fixed intervals and repeating each condition three times. The differences were smaller than I expected and my temperature control was imperfect, so I was careful in the write-up to describe what the data could and could not support. Beyond the syllabus I read food industry news and have been working through Harold McGee's On Food and Cooking, using it more as a reference than a cover-to-cover read.

What else have you done to prepare outside of education, and why are these experiences useful?

I work Saturdays and Sunday mornings on a supermarket bakery counter. Much of it is routine, but it has taught me a great deal about real food production: baking off frozen dough to timed schedules, recording temperatures, rotating stock, and answering allergen questions accurately rather than approximately. I have learned that consistency is a technical achievement, and that a product failing at the last stage of the chain wastes everything done before it. Being the person who has to tell a customer there is no seeded bloomer left has also improved how I deal with people who are annoyed with me. At the community food pantry I volunteer for two hours a fortnight, mostly sorting donations and checking date codes. Another volunteer and I took on one small job together: writing simple recipe cards for the items that were consistently left behind, such as tinned pulses and packet polenta. We tested each recipe at home first, kept them to five ingredients, and asked a few regular visitors what they thought before printing them. Uptake of the tinned pulses did improve over the following weeks, though we could not separate that from other changes in what was being donated, so I would not claim more than that. At college I am part of a small group that runs a lunchtime cookery session for first-year students, where I usually take responsibility for planning quantities and costing. Outside this, I swim twice a week, which keeps my weekends manageable alongside shifts and coursework. I am looking forward to laboratory work with equipment I cannot improvise at home, and to working in teams on product development briefs where the constraints are set by someone else.
