Why do you want to study this course or subject?
The first time I made yoghurt at home I left it too long and ended up with something sharp and separated. Rather than throwing it out, I started reading about how lactic acid bacteria drop the pH and why casein micelles collapse into a gel at a particular point. That sent me down a route I did not expect: not cooking as a craft, but food as a material with measurable properties that change predictably under heat, acid, shear and time. Food science appeals to me because it sits exactly where my A levels meet something I can see and taste. Chemistry explains why my bread browns and why an emulsion splits; biology explains spoilage organisms and shelf life; maths gives me the tools to handle process data rather than guess. I want to study a subject where a lab result has a practical consequence for what ends up on a shelf and whether it is safe. I am also drawn to the problems the industry has not solved. Reformulating products to cut salt or saturated fat without losing texture seems genuinely difficult, because salt does far more than taste salty, and fat carries flavour and mouthfeel. Reducing waste interests me just as much, both in factories and in households confused by date labels. A degree in food science would let me work on these questions with proper analytical methods instead of opinions, and I would like to move into product development or quality in manufacturing afterwards.
How have your qualifications and studies helped you to prepare?
I am studying Chemistry, Biology and Maths at A level, which between them cover most of the groundwork I will need. In chemistry I have most enjoyed the organic and analytical topics: understanding how esters contribute to flavour, and using titration and chromatography in practical work has made me careful about calibration, dilution and recording exactly what I did. My biology course has given me a working knowledge of enzymes, microbial growth and digestion, and my coursework on factors affecting enzyme activity taught me how quickly poorly controlled temperature ruins a data set. Maths supports both, particularly statistics, where hypothesis testing and sampling have changed how I read claims about diet in the news. For my EPQ I investigated whether adding different proportions of wholemeal flour changes the crumb structure of a simple loaf. I baked eight batches under controlled proving conditions, photographed and measured the crumb, and asked a small taste panel to score texture and flavour using a scale I designed. The results were messy and my sample size was small, but writing it up taught me about controlling variables in food experiments, the difficulty of sensory work and the need to be honest about the limits of what I had shown. Outside my subjects I read food science writing where I can, including Harold McGee's On Food and Cooking, which I use as a reference rather than reading straight through, and I follow food safety recall notices out of habit because the reasons behind them are usually instructive.
What else have you done to prepare outside of education, and why are these experiences useful?
Through my college I arranged three days of supervised work shadowing with the quality team at a bakery that supplies local shops. I was an observer, so my tasks were simple: I wore the correct PPE, followed the visitor hygiene rules, watched the technician take samples, and helped record weights and temperatures while she checked them. I saw metal detection and weight checks on the line, sat in on a short morning meeting about a batch with an uneven bake, and looked at how paperwork traced a finished product back to a flour delivery. What struck me was how much of quality work is documentation and communication with production staff rather than laboratory glamour, and how seriously a small temperature deviation is treated. I asked the technician about her route into the job and she recommended getting comfortable with HACCP principles early, which I have since read about in outline. On Saturday mornings I volunteer at a community food pantry, unpacking deliveries, checking dates and sorting stock so that older items go out first. I have had many conversations with people worried about whether food past its best before date is safe, which is where I first understood how confusing labelling can be. I also have a part-time job in a supermarket cafe, where I handle food hygiene routines, temperature probing and cleaning schedules, and hold a basic food hygiene certificate. Both jobs have taught me to keep to procedures when I am tired and busy, which I think matters more in this field than natural talent. At home I keep a sourdough starter, make kimchi and paneer, and note down what I change each time, mostly because I want to know why something worked rather than repeat it by luck.
