Why do you want to study this course or subject?

The supermarket bakery where I work on Saturdays throws away trays of unsold sourdough by nine in the evening, while the free pantry two streets away runs short of bread almost every week. Standing between those two facts for the past year has made me curious about the whole chain: how a product is designed, costed, made safe, packaged and priced, and how much of what ends up in a bin was decided long before anyone baked anything. Food innovation appeals to me because it treats those questions as connected problems rather than separate ones. I enjoy Chemistry most when it explains something I can taste. Learning about the Maillard reaction changed how I thought about the bakery ovens, and studying emulsions made me understand why the mayonnaise we use splits if it gets too cold in the delivery van. I like that this subject asks me to hold two kinds of thinking at once: the technical side of proteins, starches and shelf life, and the human side of what people will actually buy, cook and eat. Reformulating for less salt or sugar is useless if the result sits on the shelf. I want to study a degree with laboratory work, sensory analysis and product development projects, because I learn best by making something, testing it on other people and finding out why my assumptions were wrong. In the longer term I would like to work in product development for chilled or ambient foods, ideally on reformulation or on reducing waste in the manufacturing stage rather than only at the checkout.

How have your qualifications and studies helped you to prepare?

My A levels in Chemistry, Biology and Food Science and Nutrition fit together usefully. Chemistry gave me the vocabulary for structure and reaction; Biology covers enzymes, microbial growth and digestion, which explains both spoilage and nutrition; and Food Science and Nutrition brings the applied side, including food safety systems, labelling law and the reasons behind dietary guidelines. Working across all three has taught me to move between a molecular explanation and a practical consequence, which I think is the habit this degree needs. For my Food Science and Nutrition coursework I developed a higher-fibre flatbread aimed at teenagers, testing four ratios of wholemeal to white flour and two levels of added bran. I ran blind tasting panels with twenty classmates using a simple hedonic scale, recorded comments and found that texture, not flavour, was what put people off the highest-fibre version. Adjusting hydration and resting time improved the scores noticeably. Writing that up taught me how easily small panels mislead you and why sample size and consistent serving temperature matter. In Chemistry I have enjoyed titrations and practical write-ups, and I volunteered as a laboratory helper, setting out equipment for younger students, which improved my own technique. I read New Food Magazine and food industry news online, and I found Bee Wilson's Consider the Fork interesting for the way it shows how equipment and processing shape what we consider normal food. I am also working on my maths confidence, since percentages, yields and concentrations run through everything in this field.

What else have you done to prepare outside of education, and why are these experiences useful?

Over the summer I spent a week work-shadowing at a factory near Leicester that makes chilled cooking sauces for supermarkets. I was there as an observer, wearing a coat, hairnet and hearing protection, and I followed the quality assistant and a technologist for two days each and the hygiene team for one. I recorded pH readings alongside a supervisor who then checked them, watched metal detector and weight checks on the line, and sat in on a short meeting about a batch of sauce that had failed a viscosity specification. What struck me was how much of innovation is documentation: the recipe change someone wanted would have meant new allergen checks, a new label and a new shelf-life trial. I asked the technologist how long a new product takes from idea to shelf, and the answer of roughly a year was not what I had expected. My bakery job has given me more everyday grounding. I start early, follow prove and bake schedules, complete temperature and cleaning records, and deal with customers asking about allergens, which has taught me to be exact rather than approximate when someone's health depends on the answer. On Sunday mornings I volunteer at a community food pantry, sorting donations, checking dates and helping people choose from what is available. Handling large amounts of surplus fresh produce has shown me how quickly quality falls once the cold chain breaks, and how much packaging choices affect whether food can be redistributed at all. Alongside this I play netball for a college team, which keeps me organised across a fairly full week, and I cook most evenings for my family, which is where I try out ideas and get honest feedback.
