Why do you want to study this course or subject?
The bakery counter where I work has a laminated sheet of core temperatures, a probe thermometer and a folder of signed checks. For my first few shifts I treated these as paperwork. Then a chilled cabinet drifted above its target overnight and I watched my supervisor work through the log, decide which products had to be withdrawn and which were still safe, and record the reasoning. Nobody was harmed and very little was thrown away, but the incident depended entirely on records kept days earlier by people who would never see the outcome. That struck me as a genuinely interesting kind of problem: how do you design a system that protects strangers through ordinary, repeatable habits? Food quality management appeals to me because it sits between science and organisation. I enjoy the chemistry of why food changes, but I am equally drawn to the question of how a business proves that it has controlled those changes. Reading the Food Standards Agency's published guidance on HACCP for small businesses showed me how much judgement sits behind a simple control point: deciding what counts as a critical limit, what monitoring is realistic for staff on a busy shift, and what evidence would satisfy an inspector. I also find labelling and authenticity fascinating, particularly allergen declarations, where an apparently small documentation error can matter enormously to one customer. I want to study this formally so that I understand microbiology, sensory assessment, auditing and standards properly, rather than picking up fragments at work. In the long term I would like to work in technical or quality roles within manufacturing or retail supply, and I expect that to involve a good deal of unglamorous verification. That prospect does not put me off; it is the part I find satisfying.
How have your qualifications and studies helped you to prepare?
Biology and Chemistry give me the foundations this course needs. In Biology I have enjoyed microbiology and enzyme work most, including practicals on the effect of temperature and pH on enzyme activity, which made sense of why blanching vegetables before freezing changes how they keep. Chemistry has been useful in a less obvious way: titrations and dilution calculations taught me to be careful and consistent, and studying esters and oxidation helped me understand why fats develop off flavours during storage. Geography has been a surprisingly relevant third subject, because units on food supply and globalisation made me think about traceability across long chains, and about how a standard agreed in one country is enforced somewhere else entirely. For my Extended Project I investigated bread staling, comparing loaves stored at room temperature, in the fridge and in the freezer, and assessing them by simple texture measurements and a small blind panel of classmates using a scoring sheet I designed. The refrigerated samples firmed fastest, which contradicted what most of my panel expected. Writing it up taught me more than the results did: my panel was too small, my scoring descriptors were vague at first, and I had not controlled slice thickness properly. I rewrote the method section honestly and explained what I would change. I read parts of Harold McGee's On Food and Cooking alongside this, which helped me distinguish starch retrogradation from simple moisture loss. I have also worked on writing clearly and briefly, since quality work seems to depend on reports other people can act on quickly.
What else have you done to prepare outside of education, and why are these experiences useful?
My Saturday job in a supermarket bakery has given me a realistic view of food handling. I portion and pack, rotate stock, complete temperature and cleaning records, and handle customer questions, including allergen queries where I know to check the printed information rather than guess. Busy periods have taught me that a procedure only works if it can be followed at speed by tired people, which is something I think about when I read about control systems. I completed the company's food hygiene training and have been trusted to open the counter and set up the displays. At college I help run a food waste group that collects surplus from the canteen and arranges for it to be used rather than binned. Organising this meant learning what can safely be redistributed, keeping a simple log of what we moved and when, and persuading staff that we would follow the rules. Attendance varies, so I now plan for fewer volunteers than promised. I cook at home most weeknights for my family, including adapting meals for my younger brother's dairy intolerance, which has made me attentive to cross-contamination in a domestic kitchen. Outside this I play netball for a local club, where being goalkeeper has taught me to concentrate for long stretches, and I have been learning to make yoghurt and kefir at home, which is an enjoyable way to see fermentation behave differently depending on temperature. Together, work, my project and the waste group have shown me that I like practical problems with rules attached, and I am ready to study them in depth.
