Personal statement example

My interest in fermentation began less in a laboratory than in a cold back kitchen, where a jar of shredded cabbage refused to behave. I had followed the salt ratio carefully, yet one batch turned soft and yeasty while an identical jar stayed crisp and sharp. Working out why — temperature swings by the window, and a much slower drop in pH than I had assumed — gave me my first real sense that fermentation is a managed microbial succession rather than a recipe. That question shaped my degree, and I now want to study it properly at master's level.

My undergraduate degree in Food Science with Microbiology gave me the foundations I will need: microbial physiology, enzyme kinetics, food chemistry and process engineering, alongside practical training in plating, enumeration and sensory panels. For my final-year project I compared a commercial Lactiplantibacillus plantarum starter with spontaneous fermentation in shredded carrot, tracking pH, titratable acidity and viable counts over fourteen days at two storage temperatures. The inoculated jars acidified faster and more predictably, but the spontaneous set developed a broader aroma profile in blind sensory testing, which I had not expected. Writing the discussion taught me to be careful about what a small design can actually support: with three replicates and one cultivar, I could describe a pattern, not prove a mechanism. My supervisor's comments on statistical caution have stayed with me more than the marks did.

A second-year group assignment was equally useful in a different way. Four of us were asked to design a shelf-life study for a chilled dressing, and I took responsibility for the sampling schedule and the spreadsheet that fed our results into the report. Keeping one manageable part properly organised, while checking in often enough that our sections matched, was more valuable to the team than trying to lead everything. I use that habit now in my job.

Since graduating I have worked as a quality assistant at a dairy producing yoghurt and soft cheese. Much of the role is routine: pH and dry matter checks, environmental swabbing, verifying starter culture addition and recording CIP records. Routine is instructive. I have seen how a delayed acidification curve is usually a handling or temperature problem rather than a culture failure, and how a phage issue looks in the data before anyone says the word. I have also learned to write findings clearly for production colleagues who need a decision, not a discussion. I contributed observations to a review of our starter rotation, though the decision and the protocol were rightly made by our technical manager.

Outside work I keep a sourdough culture and a regular kombucha ferment, mostly for the pleasure of it, and I have started recording gravity readings on small cider batches made from allotment apples with a neighbour who has pressed fruit for years. I also help at the allotment association's Saturday produce stall, which involves more crate lifting and change-giving than microbiology but has taught me how people actually talk about sour, funny and fizzy foods.

What I want from a master's is depth I cannot reach on my own: fermentation kinetics and modelling, yeast and bacterial genetics, bioreactor design, and analytical methods such as HPLC and GC for organic acids and volatiles. I am particularly interested in mixed-culture and spontaneous processes, and in how producers can keep the character of those ferments while making them consistent and safe. In the longer term I would like to work in process or product development for a fermented food or drinks producer, ideally in a role that keeps me close to both the data and the tasting bench.
